The taro starch extracted from taro with the processing was used as raw material. Finally, study on application of low-fat Chiffon cake with the fat mimics was carried out.
本课题选用重庆地区的芋头品种为原料,制备芋头淀粉,再利用自制淀粉制备淀粉基质脂肪模拟品,最后探索脂肪模拟品应用到戚风蛋糕的制作中。
